Here's a delicious vegan recipe that combines creamy hummus with fluffy rice for a satisfying and healthy meal:
Hummus and Rice Bowl Recipe:
Ingredients:
- 1 cup brown rice
- 2 cups water
- 1/2 teaspoon salt
- 1 can chickpeas, drained and rinsed
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1/4 cup water
- Salt and pepper to taste
- Optional toppings: chopped fresh parsley, sliced cherry tomatoes, sliced avocado, sliced cucumber, or roasted vegetables
Instructions:
- Rinse the rice in cold water and drain well.
- In a medium saucepan, bring the water and salt to a boil. Add the rice, stir, and reduce the heat to low. Cover the pan and simmer for 35-40 minutes, or until the rice is tender and the water has been absorbed.
- In a small bowl, mix together the chickpeas, cumin, smoked paprika, garlic powder, onion powder, and salt. Stir well to coat the chickpeas with the spices.
- In another small bowl, whisk together the tahini, lemon juice, water, and salt and pepper to taste. The mixture should be smooth and creamy.
- Once the rice is cooked, divide it among four bowls. Top each bowl with the spiced chickpeas and a generous dollop of hummus.
- Drizzle the tahini sauce over each bowl and add any optional toppings you like.
- Serve immediately and enjoy!
